How to Make Chicken Inasal Recipe| Chicken Inasal ala Mang Inasal Recipe

Ingredients:
1600 grams – 4 pcs Chicken Legs (clean with 2 tbsp coarse salt)

Marinade Mix:
1/ 2 cup – brown sugar
1 tbsp – spicy chili powder or fresh chilis
2 tbsp – ground black pepper
1 & 1/2 tsp – table salt
4 tbsp – dark soy sauce
1 tbsp – liquid seasoning
1/3 cup (10 pcs) – Calamansi juice (or lemon/ lime juice)
2 stalks – crushed lemon grass
1 & 1/2 thumbsized – crushed ginger
2/3 cup – crushed garlic
330 ml – sprite (1 can)
1 cup vinegar

Chicken Oil:
1/3 cup – olive oil
1/3 cup – Chicken Skin w/ fats (rub w/ 1 tbsp sallt/ wash & drain/ marinate w/ 1 tsp salt 6 hrs)
2 cloves – crushed garlic
1 & 1/2 tbsp – annatto/ achuete seeds

Basting Sauce:
1/3 cup – Chicken Oil
2 tbsp – butter

Dipping Sauce:
Liquid Seasoning + Soy Sauce + Calamansi juice or Lemon Juice + Spicy Chilis
